Let me start by saying I am not a nutritionist, I am not a dietician, and most of the time when it comes to food my knowledge is "trial and error" based. That being said, I love cooking, trying new things, and experimenting in the kitchen. I dislike measuring things, and cleaning so you probably won't find any baking on here, and when I post recipes they probably won't have exact measurements.... sorry.
I am not a vegetarian, but not eating meat makes me feel generally healthier so you probably won't find a lot of meat based recipes on here... but there might be the occasional one... Anyway, let’s get on with it shall we?
"Really yummy lentil and brown rice cakes" - my very scientific name for these little gems.
What you will need:
Brown rice (I used a 1/2 cup dry and cooked it with half water and half veggie broth)
Red lentils (If I had to guess I'd say I used about 1 cup dry, and i cooked them in some rose we had left in the fridge, water, and veggie broth)
1 Yellow pepper (finely diced)
Handful of mushrooms (I used button mushrooms, finely sliced)
A bunch of garlic (I love garlic so I used about 4-5 cloves)
1 onion (finely diced)
2 green onions (chopped)
A bunch of cheese (maybe a cup grated, add more or less depending on your love of cheese... I used cheddar)
Olive oil, 1 egg, salt/pepper, and dried Basil
Cook the Lentils and the rice (separately) and let cool. As they cook fry up the rest of the ingredients (except for the egg and the cheese) in some olive oil. When all the ingredients in the fry pan are cooked thoroughly let them cool as well.
Then combine all the ingredients in a large bowl, add your egg and your cheese. (once I used quinoa instead of rice...if you do this you might need an extra egg to bind the mixture together.) stir and blend well.
Then get a nonstick fry pan and add some olive oil, heat on med. Get a good sized spoon and spoon the mixture onto the frying pan. Cook for about 5 mins aside, until golden brown.
I eat these with a spinach salad, I eat them on their own, and instead of meat, I load on a slice of cheese, some sauteed mushroom & onlions, lettuce and a pickle on a hamburger day... they are very versatile. You can make some Aioli with them, eat them with ketchup, or mustard... they are husband approved, he loves them just as they are.... much like he loves me:)
